Lady Ross Pickles

Ingredients

* 3 cups chopped cucumber
* 3 cups chopped onions
* 2 cups small silver skin onions peeled
* 1 cup diced celery
* 1 ½ cups tart apples
* ¼ cup red pepper diced
* 4 cups granulated sugar
* ¼ cup mustard seed
* 2 cups cider vinegar
* 1 cup water

Brine - dissolve
* 1100 ml water + ½ cup pickling salt

Paste
* ½ cup flour
* ½ cup dry mustard
* 1 tsp turmeric
* ½ cup water

Directions

1. Combine cucumber and chopped onion in large container. Cover with Brine - let stand overnight then drain well.

2. Add remaining ingredients. Bring to a boil.

3. Add some hot fruit to the Paste so it won't go lumpy then mix paste with boiling fruit mix.

4. Boil 6 minutes, pour into sterilized sealer jars and seal.

Makes: 4 jars

Growing Your Soil

Not the Landfill. All of our bags, pallets and pallet wrap can be recycled. Our plastic is made from no. 4 LDPE (Low-density polyethylene) plastic which can be recycled by returning clean, dry, empty plastic bags to recycling drop off centers or retailers and municipalities (curbside collection also) that provide designated plastic bag recycling. Wooden pallets can be reused or recycled at designated wood recycling areas with your municipality.
