My Gluten free baked Oatmeal recipe.

This is my version of a very healthy Apple/Blackberry crumble.  I started making this as a desert last year, it was a sugar free and gluten free version of its unhealthier options.   Our property is full of blackberry bushes and every summer we pick at least 15 large ziploc bags and placed them in the freezer.  My kids also get dragged to the u-pick strawberry farm every summer and put to work.  We like to fill half our freezer with berries but if you have better things to do, like visit the beach or just relax Costco has a great version.

Apples peeled and cored and chopped. Chopping is optional but that is the way that Rick likes them.

Then I add in frozen blackerberries and sprinkle with cinnamon.  Costco also sells a triple berry blend that is organic and full of blackerberries, strawberries and blueberries it works well as a substitute.  I use a vitamix to grind the rolled oats and the nuts the topping but you could purchase almond flour and oat flour preground.

Fruit:

Peel six to eight apples, chopped and cored. Mix in  3 cups of berries.  You can use any fruit that you have.  Place in a large baking dish.

 

Topping:

1 cup ground almonds or pecans (I usually use pecans!)  or 1 cup almond flour.

1 cup rolled oats.

1 cup ground rolled oats or purchased almond flour.

1.5 teaspoons of cinnamon.

5 tbsp honey or maple syrup (I use maple syrup)

.5 tsp sea salt (optional).

6 tbsp melted coconut oil.

Mix the above ingredients together in a large bowl (I prefer to use a kitchenaid mixer as I am usually in a hurry). If the topping seems to dry to you can add a bit more coconut oil.  Spread the topping across the fruit and bake at 350 degrees until it bubbles.  Then check with a fork to make sure the apples are soft and voila it is done.  I know I am not a cookbook author by any means but I am sure you get the idea.

If this is being served as a desert I usually add banana ice cream.  This dish without the ice cream is the best subsitute for your morning oatmeal, trust me it will not dissapoint!!
